Daily Journey Entry

Once again, we overslept and missed out on exercise. I hate going to bed so late… but it always seems I’ve got so much to do and I never make enough time for it.
Food:
- Breakfast (6:45am) - whole wheat english muffin sandwich w/ fat-free cheese & egg (see note), 6oz whole milk.
- Snack (10:00am) - banana.
- Lunch (11:15am) - whole-wheat sandwich w/ turkey/fat-free cheese/brown mustard, low-fat string cheese, 1/2 cup celery sticks, 1/2 cup carrot salad.
- Snack (2:00pm) - 94% fat free popcorn (whole bag).
- Dinner (8:00pm) - Chicken Curry w/ tomato sauce/green beans/carrots, chicken/herb rice, handful of Triskets, handful of Ritz crackers, 1/2 unsweetened apple sauce.
Exercise:
- 11:45am - 30 min walk.
State of Mind:
- Brighter but tired. I feel better about the choices I’ve made the last few days, although I know I’ve consumed a little more than I needed to the last two nights. A much smaller proportion of my food intake is bad so it can’t be too bad. Tired only because I know I’m not getting enough sleep. Gonna try to get to be earlier tonight.
Tomorrow:
- Definitely gonna try to get in another run.
- I need to take a few snacks for myself. I just finished off the last bag of popcorn I had in my cubicle drawer.
- I will also appreciate the rest I’ll get from the Sabbath starting. I have a message to prepare, but it’s still much less stressful to me than most of my other concerns.
Notes:
- I tried something I’d never done before: I prepared a scrambled egg in the microwave. I got out a small glass bowl (one of the ones we use for salsa). I sprayed the bottom of the bowl with fat-free cooking spray. After cracking the egg into the bowl, I scrambled it with a fork and then microwaved it for about 45 seconds. The egg grew to 4-5 times the original size, but once the microwaving is over, the egg deflates. I toasted the muffin while it was microwaving and then assembled my sandwich, I was happy with the results, but the egg really needed some seasoning.
